CHRISTMAS Cookies Whoopie Pie Recipe - delicious Christmas Cookies to put in the stocking or to deliver to your neighbors. They are so good!Ingredients YOU will need to make these Christmas Cookies:

  • 1 cup sugar
  • Ā½ cup butter, softened
  • Ā½ cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 2 oz unsweetened baking chocolate, melted and cooled
  • 1Ā¾ cups all-purpose flour
  • Ā½ teaspoon baking soda
  • Ā½ teaspoon Kosher salt

Step One

Preheat the oven to 400F. Line a baking sheet with a parchment paper, set aside.

In a large mixing bowl, using a mixer whisk 1 cup sugar with Ā½ cup softened butter, Ā½ cup of buttermilk, 2 teaspoons of vanilla extract, 2 eggs and 2 oz melted unsweetened chocolate. Whisk until everything is combined.

Using a spatula or a spoon stir in 1Ā¾ cups of flour, Ā½ baking soda and Ā½ teaspoon salt.

Using a tablespoon, place rounded tablespoon of the dough on the baking sheet, about 2 inches apart.

Bake 8-10 minutes. Immediately remove from cookie sheet to a cooling rack and let it cool for about 30 minutes.

HOW TO MAKE CREAM CHEESE FILLING

Using a mixer whisk 4 oz softened cream cheese, 6 tablespoons of butter and Ā½ teaspoons of vanilla extract in a mixing bowl on medium speed until fluffy. Gradually beat in 1Ā½ cups of powdered sugar until light and fluffy.
