Chicken Gnocchi Soup Recipe


  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 3/4 cups onion (diced)
  • 1/2 cup carrots (diced)
  • 1/2 cup celery (diced)
  • 4 cloves garlic (minced)
  • salt and black pepper (to taste)
  • 1/3 cup all-purpose flour
  • 4-6 cups chicken broth (I used 6 cups)
  • 1 cup heavy whipping cream
  • 1/2 cup milk
  • 2 cups cooked chicken breast (shredded or cubed)
  • 1lb potato gnocchi (cooked)
  • 3 cups fresh baby spinach
  • 1/4 teaspoon basil
  • fresh grated Parmesan (for serving)


Step 1
In a soup pot heat butter and olive oil on a medium heat. Add celery, carrot, onion and garlic. Season with salt and pepper to taste. Cook on medium low heat for about 5 minutes, don't forget to stir with a spoon while cooking. Add flour to the vegetables and cook for few minutes, constantly stirring.
Step 2
Add chicken broth one cup at a time. Stir. Add heavy whipping cream and milk. Stir. Add cooked chicken then simmer it for 20 minutes. Stir once in a while.
Step 3
After simmering for 20 minutes add cooked gnocchi and spinach. Sprinkle dry basil. Cook for about 1-2 minutes. Grab a bowl and enjoy this delicious Chicken Gnocchi Soup! Garnish with Parmesan cheese. =)
