Simply Delicious Potato Hash and Eggs Breakfast Recipe - You will love this simply delicious breakfast recipe made of eggs, potato hash and bell peppers.

Ingredients

  • 2lb potato (cubed)
  • 1 onion (chopped)
  • 4 tablespoons butter
  • 1 red bell pepper (chopped)
  • 8 eggs
  • greens for garnish (like dill, parsley or green onion)

Directions

Step 1
Over medium heat melt butter then add potato and onion, cover with lid and cook for 7 minutes. Stir one to two times while cooking.
Step 2
Add bell pepper. Season with salt and pepper. Cover with lid and cook for 3 minutes.
Step 3
Uncover, stir and cook more for about 8 minutes or until tender.
Step 4
Add eggs season with salt and pepper. Cover with lid and cook for 3 more minutes. Garnish with greens. Enjoy!
