Creamy Turkey Breast and Potato Casserole

Ingredients

  • 4 tablespoons butter (plus more for greasing)
  • 1/2 onion (diced)
  • 1/3 cup flour
  • 2 - 3 cups milk (I use 3 cups of milk)
  • 1 cup heavy whipping cream
  • 2lb potato (peeled and sliced)
  • 2-3 cups cooked turkey breast (you can also use chicken breast or ham)
  • 2 cups colby Jack cheese (grated)
  • salt and pepper to taste

Directions

Step 1
Preheat the oven to 400F.
Melt butter in the large skillet on a medium heat. Add onion, saute it until golden color about 4 minutes. Add flour and whisk it with a wooden spoon, cook for 2 minutes or until it turns golden brown color.
Step 2
Slowly pour in milk and heavy whipping cream, whisk contentiously for 3-4 minutes. Add salt and pepper, reduce the heat to low.
Step 3
Slice potato the thinner the better. Using butter grease 2 quart baking pan. Add 1/2 of the sliced potato, turkey breast, cheese followed by 1/2 of the sauce mixture. Repeat again with the rest of the ingredients.
Step 4
Cover with foil and bake for 40 minutes, then remove foil and bake it for another 20 minutes or until the potato are cooked. Garnish with greens and ENJOY!
