Potato Hash with Eggs Breakfast Recipe

This Potato Hash and Eggs Recipe is one of my family’s favorite breakfast recipes.

Super easy to make Hash Brown Potato Recipe with eggs and red bell pepper, makes it a perfect healthy breakfast recipe you and your family will enjoy!

How to make Potato Hash:

Lets begin by peeling and chopping potato, bell pepper, and onion.

Chopped onion added to potato inside the skillet.
Over medium heat melt butter then add potato & season with salt & pepper to taste.  Cook uncovered for 5 minutes on medium heat/high heat. Stir one to two times while cooking.

Add chopped onion and cook for another 5 minutes.
Chopped red bell pepper inside the skillet with hash brown potatoes.
Add bell pepper. Season with salt and pepper & cook for 7 minutes. Stirring few times.
Hash Brown Potatoes inside the cast iron skillet, garnished with chives and black pepper.
Add eggs season with salt and pepper. Cover with lid and cook for 3 more minutes or until eggs are cooked to your liking.
 
Garnish with fresh chives. Serve with bacon, avocado or tomatoes. Enjoy!

Ingredients
  

  • 5 medium potatoes peeled & cut into strips
  • 1 small onion chopped
  • 4-5 tablespoons butter
  • 1 red bell pepper chopped
  • 3-5 eggs
  • greens for garnish like dill, parsley or chives
  • salt & pepper to taste
