To make Strawberry Rhubarb Coffee Cake Recipe you will need:
For Strawberry Filling
1 cup fresh strawberries, sliceds
1 cup rhubarb, sliced
1/4 cup granulated sugar
2 Tbsp cornstarch
1 Tbsp cold water
1 tsp lemon juice
For Crumb topping
1/3 cup all-purpose flour
1 1/2 Tbsp granulated sugar
2 1/2 Tbsp butter, cubed
For Cake Dough
1 3/4 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
7 Tbsp butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/3 cup sour cream
1/3 cup buttermilk
Preheat the oven to 350F.
To make strawberry and rhubarb filling place sugar and corn starch into small sauce pan. Add water and lemon juice. Give it a mix. Add strawberries. Cook on medium heat until it starts boiling, keep stirring. Turn the heat to low and simmer for about 1 minute. Remove from the heat and let it cool.
To make cake dough using stand mixer whisk butter with sugar until pale color for about 5 minutes.
In a mean while take another big bowl and combine flour, baking powder, baking soda, and salt.
After 5 minutes of whisking butter with sugar add egg and vanilla. Whisk.
Add sour cream and buttermilk.
Give it a whisk.
Add dry ingredients. Stir with a spoon until combined.
Place parchment paper in a baking dish then grease it with butter.
Spread cake dough with a spoon.
Add strawberry rhubarb filling.
Now lets make crumb topping – combine all crumb topping ingredients in a small food processor. Pulse few times to make crumbs.
Sprinkle crumb topping over strawberry filling and bake for 50 minutes or until cake top turns into golden color.
Let it cool.
Now cut a slice and enjoy with a hot cup of coffee.
