Hi beautiful! I hope you are having a wonderful week! Today I have a really delicious and super Easy Eggplant Bruschetta Recipe for you! I cook this Eggplant Bruschetta Recipe at the “Chopped Style” cook-off when I was at the KIC Think Thank Event, in Cincinnati, Ohio.  Many of you might have seen it on my Instagram Stories, where I was sharing all of the details about the event. I learned about Fred Meyer’s goals to end hunger in the USA, and how we can stop wasting food.  Did you know that 40% of food in the U.S goes uneaten, yet there are 1 in 8 kids and adults who suffer from hunger? Fred Meyer Stores created a campaign called ZERO HUNGER/ ZERO WASTE to aim to end hunger in our country & eliminate waste in our kitchen.

  • One of the ways we can stop wasting food in our kitchen is by creating a meal plan for a week, it’s not only going to save you time and money but also you will not feel bad for wasting uneaten food.
  • You can challenge yourself to create a dinner using what you have in the fridge for one week and call it what’s in my fridge dinner like Lena does from Lenaskitchen.com.
  • Using Fred Meyer Stores Clicklist – where you can purchase ingredients from the store and pick them up at the store while staying in your car. I absolutely love using this feature. Clicklist saves so much time!  Do I have any Clicklist users here?
  • I really like what Danielle from rusticjoyfulfood.com is doing, she said when she makes dinner, her kiddos and her will pack some of it in the food boxes and deliver them to the homeless people. What an amazing idea!

  • 1 eggplant, sliced in half, stem removed
  • 2 organic red bell peppers, cut in half and seeds removed
  • 2 organic ripe tomatoes, stem removed
  • 1 medium onion, peeled, stem removed & cut in half
  • 1 carrot, peeled
  • Private Selection Cold-Pressed Avocado Oil  – perfect for cooking with high heat
  • salt and pepper, to taste
  • ⅛ teaspoon red pepper flakes
  • french bread, sliced
  • Kroger Roasted Beef Traditional, for garnish
  • Simple Truth Organic Feta Crumbles, for garnish
  • cilantro, for garnish

  1. Preheat the oven to 450F. Line baking sheet with parchment paper. Place on a baking sheet 1 eggplant, 2 red bell peppers, 2 tomatoes, 1 onion and 1 carrot. Take a brush or using your hand oil all of the vegetables with avocado oil, season with salt and pepper to taste, bake on a middle rack for 20 minutes. After, broil on high for about 5-7 minutes.

Easy Eggplant Bruschetta Recipe May 2018 www.munchkintime.com2. While vegetables are baking, slice french bread drizzle olive oil and bake on top rack for about 3 minutes or until toasted.

3. Remove skin from the eggplant, place all ingredients in the blender and blend until smooth (if you want you can instead of blending chop everything with a knife). Season with ⅛ red pepper flakes, salt & pepper to taste.
