Healthy Mediterranean Shrimp Recipe (1 of 1)-10

 Here is what we had for dinner last night, a Healthy Mediterranean Shrimp.  I got this recipe from HERE.  It was our first time trying this recipe and we liked how it turned out.  This Mediterranean Shrimp recipe is healthy, light, and it has shrimps.  What else do you need?  It is a perfect dinner for a hot day!!!

8oz dry angel hair pasta
1-1/2 teaspoons extra virgin olive oil
1-1/2lbs raw medium shrimp, peeled and de-veined
1/4 teaspoon salt
1/4 teaspoon pepper
3 garlic cloves, minced
1-1/2 cups chicken broth, divided
2 Tablespoons fresh lemon juice
1/2 teaspoon dried basil
2 teaspoons cornstarch
4 cups chopped fresh spinach
2 cups cherry tomatoes

If you never peeled and DE-veined shrimps don’t worry it is not as hard as it sounds.  Click HERE to learn how to peel and DE-vein shrimps( I like how they have an easy to follow video instructions).  It is super easy and fast all what you will need is kitchen scissors, few napkins, and if you are lucky like me, get an extra pair of hands !!! Trust me if my 3-year-old toddler can do it, so can YOU!!! ( we were so excited that we forgot to put our aprons on, oooops :P) (1 of 1)-4(I need to learn how to take quick and beautiful pictures, if you have any tips please comment below, it will be really helpful)

Now back to our dinner…. (1 of 1)-5you can serve it with feta cheese, fresh basil, or freshly cracked pepper. I just used baby spinach, since I did not had other ingredients.
