Here is a perfect dessert recipe to make for upcoming family gatherings called Nutty Italian Cake Recipe!

Now lets go back to our Italian dessert. Nutty Cake is loaded with 2 cups of delicious pecans inside the cake layers and over the top of the cake, followed by sweet as candy and white as snow frosting. Buttermilk makes this pecan cake extra fluffy and little pinch of salt gives this cake recipe an extra kick.
It’s so easy to fall in love with a dessert like Nutty Italian Cake. Make it for upcoming Thanksgiving your guest will love every bite of it!
Ingredients you will need to make Nutty Italian Cake:
- 1 cup butter, softened
- 1 cup organic sugar
- 5 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt or 1/4 teaspoon table salt
- 1 cup buttermilk
- 1 cup chopped pecans
Ingredients for the Frosting:
- 16oz cream cheese, softened
- 1/2 cup butter, softened
- 3 cup powdered sugar
- 1 cup pecans for garnish

How to make Pecan Cake:
- Preheat oven to 350°.
- Grease two 9 inch baking pans with coconut oil and line them with parchment paper, set aside.
- Using hand mixer whisk butter with sugar until fluffy and light color.
- Whisk in one egg at a time, whisking well after each egg.
- Add vanilla. Whisk.
In a mixing bowl combine flour, baking soda and salt.
Whisk into the batter 1/2 of flour mixture then add 1/2 cup buttermilk, whisk until combined.
Repeat with the rest of the flour and buttermilk, whisking until combined.
Divide the batter into two baking pans and bake for 35 – 40 minutes or until toothpick comes out clean when inserted in the center. Let it cool completely on a cooling rack. Make cake layers flat by cutting any bumps with a knife. While cake is cooling lets make cake frosting.
To Make Frosting:
In a mixing bowl using hand mixer beat powdered sugar with butter until fluffy texture. Add cream cheese beat until combine.
To assemble the cake:
Place cake layer on a cake plate, spread half of the frosting over the top. Add second layer and spread the rest of the frosting over the top and sides. Garnish with pecans. Let rest for at least 2 hours or overnight. Enjoy!

How exciting!!! I use organic sugar simply because I don’t like using bleached white sugar. You are welcome to use just regular white sugar in this recipe it is not going to make any difference. 🙂
