Roast Beef Sandwich Recipe - The only thing better than a classic roast beef sandwich is a double-decker roast beef sandwich! Piled high with thin slices of roast beef, creamy mayo, crisp lettuce, juicy tomato, and pepper jack cheese for a bit of a kick, and sandwiched between not 2, but 3 slices of toast!
It seems so simple (and it is) but there’s something to be said about the perfect bread-to-filling ratio and choosing the right quality ingredients.
I much prefer to buy fresh beef and cheese slices from the deli counter rather than pre packaged deli meat for the best flavor. I also make sure that the lettuce I use isn't wilted and is still nice and crispy. It's the little things that are actually the big things when it comes to making the perfect sandwich.

They’re easy to make and customize, so you can’t go wrong with a great big sandwich for an easy sit-down lunch, lunch on the go at work, or to pack in school lunches.
This version is how my whole family enjoys theirs, but you can certainly jazz it up with some gourmet toppings too!
Cooking Tips & Substitutions
If you’re wondering what to put on a roast beef sandwich that takes it up a notch, here are some ideas to bring it to gourmet sandwich levels!
- Add relish, horseradish, or hot sauce to the mayo for an extra bit of spice and flavor.
- Swap the Pepper Jack cheese for your favorite kind. Sharp cheddar cheese, mozzarella, Provolone, Swiss, Gouda, etc.
- You can even omit the cheese if you don’t want any cheese in your sandwich.
- Add sliced red onions to your filling or crispy radishes for some crunch.
- If you prefer to keep it as a traditional sandwich without the third piece of bread, go right ahead. You can also swap the sliced bread for brioche or Kaiser buns!
Ingredients for the Best Roast Beef Sandwich
- Bread: You’ll need 3 slices of toasted bread. It’s up to you what kind you use and how well they’re toasted. Rye, Sourdough, Texas toast, whole wheat, white bread, gluten-free bread, you name it.
- Mayonnaise: I like to use real mayonnaise whenever possible. I find Miracle Whip too sweet and not to my taste, but you use what you prefer.
- Lettuce: Crisp Romaine lettuce is my favorite. Wash and dry the leaves before adding to the bread, otherwise, the toast will be soggy.
- Tomato: Sliced tomato adds a lovely acidic note that cuts through the meat and cheese nicely.
- Roast beef slices: You’ll need about 6 slices. If you’re not picking some up from the deli, you can also use leftover roast beef from yesterday’s dinner. Just remember to slice it thin.
- Pepper Jack cheese: 4 slices of cheese, please! This is also something I like to get freshly sliced from the deli counter.
How to Make a Roast Beef Sandwich
Step 1: Toast all 3 slices of bread. Lightly toasted or dark, it’s up to you. Then, place them on a clean work surface.
Step 2: Scoop out the mayo onto the bread and spread it evenly across the surface of each slice of toast.
Step 3: Take 2 lettuce leaves and place them on top of the first bread slice. Then, add the tomato slices on top of the lettuce.
Step 4: Place the second slice of mayo-slathered toast over the tomatoes. Add 2 slices of cheese, 6 slices of roast beef, and the remaining 2 slices of cheese on top of that.
Step 5: Take the last piece of bread and turn it over on top of the sandwich, with the mayo side facing down.
Step 6: Stick the assembled roast beef sandwich with sandwich sticks or toothpicks to hold it together. Slice it in half or 4 triangle pieces. Enjoy every bite!

- 3 slices bread toasted
- 2 tablespoons mayo
- 2 lettuce leaves washed & pat dry
- 1 tomato sliced
- 6 roast beef slices
- 4 pepper jack cheese
Instructions
- Begin by toasting 3 slices of bread in a toaster until they reach your desired texture and color. Spread mayo over the toasted bread slices.
- Place 2 lettuce leaves over the first bread slice and then add sliced tomatoes on top. Cover the tomatoes with the second bread slice.
- Spread mayo over the top of the second bread slice and place 2 slices of pepper jack cheese on top. Then, add 6 slices of roast beef, followed by another 2 slices of cheese, and the last slice of bread spread with mayo.
- Spread mayo over the top and add 2 slices of pepper jack cheese. Then add 6 slices of roast beef, follow by 2 slices of cheese and last slice of bread spread with mayo.
- Insert 4 sandwich sticks and then cut the roast beef sandwich into 4 triangle pieces. Now you're ready to take a bite and enjoy your delicious roast beef sandwich!
