– 1 1/2 lb chicken tenders or 4 skinless boneless chicken things – 4 large flour tortillas – 2 cups cheddar cheese shredded – 2 cups spring mix greens, coarsely chopped – 1 cup salsa mild or fresh pico de gallo Chicken Fajita Marinate – 2 tablespoon s avocado oil or any oil of your choice – 2 teaspoons lime juice freshly squeezed – 2 teaspoons fajita seasoning – 1/2 teaspoon chili powder – 1/4 teaspoon salt or to taste
Now, coat each side of chicken tenders with fajita seasoning marinate. Next, using a nonstick skillet or cast iron preheat 1 tablespoon of avocado oil, add chicken tenders and cook for 2 to 3 minutes on each side over medium-high heat or until chicken is no longer pink.
