INGREDIENTS

– 6 eggs hard boiled, cooked for 10 minutes, peel and cut in half – 2 tablespoons mayo – 1 tablespoons pickles finely chopped, or use relish – 1 teaspoon Dijon mustard – sea salt & pepper to taste – 1/2 cup flour – 2 raw eggs beaten in a mixing bowl – 1/2 cup bread crumbs – 1/2 cup butter crackers blended into crumbs – oil spray or melted butter for brushing – dill for garnish, 100% optional

Step 1

In a mixing bowl add cooked egg yolks, mayo, pickles, Dijon mustard, salt and pepper to taste. Give it a good mash with a fork, until everything is combined and egg yolks turned into puree.

Step 2

In one dish add flour. Into another dish add 2 raw eggs and beat. Finally into 3rd dish add bread and cracker crumbs and mix to combine. Place dishes in this order: flour - beaten eggs - crumbs. Take one cooked egg white at a time and coat each one in flour, then eggs, then crumbs.

Step 3

Place breaded egg whites into an air fryer dish lined with parchment paper, spray or gently brush oil or melted butter over the breaded eggs. Air fry at 390F for 4-5 minutes on each side, or until golden color.

Step 4

After air frying, add egg yolk puree and garnish with dill or any greens of your choice. Enoy!
