INGREDIENTS

Step 1

Whisk eggs in a mixing bowl. Feel free to add a bit of milk or water to make them extra fluffy. This is completely optional.

Step 2

Melt the butter in a large skillet and pour in the egg mixture. Let it sit for a minute. Use a rubber spatula to move the edges in towards the center of the eggs, doing this until the eggs are scrambled and cooked through. Season with spices.

Step 3

Lay out a tortilla onto a flat surface or platter. Add ½ cup of fluffy scrambled eggs, ½ cup of the golden crispy potatoes, and ¼ cup of shredded cheese to the middle of the tortilla shell.

Step 4

Next, add ¼ cup of crispy bacon bits and sausage. Take the outer edges of the burrito and fold them into the middle. Then, roll the burrito up nice and tight.

Step 5

To the hot skillet, add a bit more butter or oil and cook the bacon egg cheese potato breakfast burrito seam side down, and once golden and crisp, flip it to brown the other side. Repeat with remaining ingredients.
