Ingredients

– 8 bone-in chicken thighs pat dry using paper towel – 2 tablespoons avocado oil – 2½ teaspoons chili powder – 1½ teaspoons brown sugar packed – 1 teaspoon garlic powder or 3-5 fresh garlic cloves, finely chopped – ½ teaspoon ground cumin – ½ teaspoon white pepper – 1 teaspoon Kosher salt – 1 onion finely chopped – ⅔ cup ketchup – ⅓ cup water – 3 tablespoons molasses – 1 tablespoon Worcestershire sauce – 1 tablespoon Dijon mustard – chives for garnish

Step 1

Place your cast iron skillet into the oven on the middle rack. Allow it sit there and heat up as you preheat the oven to 400F.

Step 2

Pat the chicken dry with paper towels. Set them aside as you combine the marinade for the chicken.

Step 3

In a large mixing bowl, combine oil, chili powder, brown sugar, garlic powder, cumin, white pepper, and salt. Whisk the mixture until completely blended.

Step 4

Place chicken thighs into the bowl with the chili mixture and toss to coat, making sure all sides of the thighs are evenly coated.

Step 5

Once the oven has preheated, carefully open the oven and place the chicken thighs skin side down into the hot skillet and bake for 40 minutes, flipping halfway.

Step 6

Transfer the cooked thighs to a plate and pour all the chicken juice into a bowl, except 1 Tablespoon. Set that aside for the sauce later.

Step 7

To the same skillet you used for the chicken with the remaining 1 Tablespoon of chicken grease, add chopped onion and cook over medium heat for about 5-7 minutes, until golden.

Step 8

Add in the ketchup, water, molasses, Worcestershire sauce, and Dijon mustard and stir continuously for a few minutes until the sauce thickens.

Step 9

Whisk in the reserved chicken juice, season with salt and pepper to taste, then return the chicken thighs back into the skillet to warm through. Coat with the BBQ sauce, garnish with chopped chives, and enjoy with your favorite sides!
