Baked Sweet Potato Wedges with Tzatziki Sauce

INGREDIENTS

– Sweet Potato – Paprika – Garlic Powder – Chili Powder – Sea Salt & Black Pepper – Olive Oil

Step 1

Before you cut the sweet potatoes you will want to peel them, although sometimes I do like to have the peel on but unfortunately my kids like them best without the peel.

Step 2

Sweet Potatoes can be hard, making it pretty hard to cut so my little secret is to pop them in the microwave for about a minute and a half to heat and soften the potato, then slice into thin wedges.

Step 3

After you slice your wedges and using your hands mix potatoes in a large bowl with olive oil and seasonings.

Step 4

Then lay the potatoes flat on your baking sheet to make certain that they bake evenly and get that gorgeous crispy outside that we love so much.

Step 5

Bake the wedges for 15 minutes and flip them so that both sides will get the chance to crisp up for you. After you flip them bake for 10 more minutes at that point they should be golden brown crispy on the outside and soft and flavorful on the inside!

Step 6

Using a spoon remove seeds from the cucumber, then thinly slice it and chop it into small pieces. Finely chop 1 garlic clove and parsley.

Step 7

Add yogurt to a small mixing, into the same bowl add chopped cucumber, garlic, parsley and season with salt and pepper to taste. Squeeze lemon juice over the top and give it a good mix.

Step 8

Serve roasted sweet potato wedges with tzatziki sauce.

Step 9

Garnish with finely chopped parsley. Enjoy!
