Banana Pancake without Milk

– 2 cups flour – 1 tablespoon sugar – 4 teaspoon baking powder – 1/2 teaspoon sea salt – 2 eggs – 2 cups almond milk unsweetened – 5 tablespoons olive oil 4 tablespoons for batter & 1 tablespoon for the skillet – 4 ripe bananas mashed – maple syrup for serving

Step 1

To make banana pancake batter, in a mixing bowl combine dry ingredients: 2 cups of flour, 1 tablespoon of sugar, 4 teaspoons of baking powder and 1/2 teaspoon of sea salt.

Step 2

Whisk it all up.

Step 3

Using a different bowl combine wet ingredients – 2 eggs, 2 cups of almond milk, 4 tablespoons of olive oil and 4 mashed bananas.

Step 4

Give it a good whisk.

Step 5

Now, add dry mixture into wet mixture and stir until just combined, be careful not to over mix.

Step 6

Pour 1 tablespoon of olive oil into the skillet and preheat it over medium heat, add 1/4 cup of pancake batter for each pancake and cook until golden color on both sides about 2-3 minutes on each side, or until pancakes are cooked thru.

Step 7

Serve with sliced bananas and maple syrup. Enjoy!
