For the Blueberry Cake – 4 large eggs – 1 cup sugar if you like your cake on a sweeter side use 1 1/4 cup of sugar – 1 cup buttermilk – 7 tablespoons butter melted, I like to use salted butter – 2 1/2 cups all-purpose flour – 1 tablespoon baking powder – 2 1/2 cups farmers cheese – 1 1/2 cups blueberries For the Crumble Top – 3 tablespoons sugar – 3 tablespoons brown sugar – 1/3 cup flour – 5 tablespoons butter melted – 2 tablespoons powdered sugar

Step 1

Preheat the oven to 350F and line baking sheet 13" by 18" with parchment paper. In a mixing bowl combine eggs and sugar, whisk until combined. Next add buttermilk and melted butter, whisk until combined.

Step 2

In a different bowl add flour and baking powder, whisk to combine.

Step 3

Add flour to batter whisk it up until there are no lumps.

Step 4

Spread the batter evenly onto a baking sheet, evenly spread farmers cheese over the top and add blueberries. Sprinkle crumble topping over the top. Bake for 35-40 minutes or until the top is golden color.

Step 5

Dust powdered sugar over the top and enjoy!

How to make Crumble Topping – In a mixing bowl add all of the ingredients and mix until combined.
