– 2 cups green cabbage finely shredded – 2 cups red cabbage finely shredded – 1/2 bell pepper or whole pepper – 1/4 cup green onion finely chopped For the Cabbage Salad Dressing – 1/4 cup extra virgin olive oil – 1/4 cup lime juice freshly squeezed about 2 big limes – 2 tablespoons shallot finely chopped – 3/4 teaspoon sea salt or to taste – 1/8 teaspoon black pepper or to taste – 2 tablespoons cilantro finely chopped – pinch sugar optional

Add salad ingredients to a large bowl.

Step 1

Combine dressing ingredients.

Step 2

Pour dressing over top the salad and give it a good toss.

Step 3

Cover and allow the salad to sit in the fridge for 2-6 hours to allow the dressing to tenderize the cabbage a bit and for the flavors to meld together.
