Cheesy Ground Beef Quesadillas – This cheesy and savory quesadilla recipe is made with ground beef, black beans, melted cheese & jalapeños.

Cheesy Ground Beef Quesadillas




– 3 tablespoons olive oil divided – 1 onion diced – 2 cloves garlic minced or finely chopped – 1 lb ground beef – 1 jalapeno finely chopped – 1 10 oz diced tomatoes with green chili I use Rotel Original or use 14 oz diced tomatoes – 1 14 oz black beans – 2 teaspoons paprika – 2 teaspoons ground cumin – salt & pepper to taste or use 1 teaspoon sea salt + 1/4 teaspoon black pepper – 4 flour tortillas – 1 cup mozzarella cheese grated – 1 cup sharp cheddar cheese grated – Cilantro

Step 1

Using a skillet over medium high heat, preheat 2 tablespoons of olive oil. Next add onion and saute 2-3 minutes or until onion is softened, stirring few times. Then add garlic and saute for 1 minute, stirring few times.

Step 2

After add ground beef with chopped jalapeno and saute for 5 minutes, or until meat is cooked thru, crumbling the meat with a wooden spoon.

Step 3

Now, add tomatoes, black beans, and spices. Stir and cook for 3 more minutes. Remove from the heat.

Step 4

Place cheese on the tortilla and add meat fixture and cilantro. Fold tortilla over and cook in the preheated skillet over medium high heat with 1 tablespoon of olive oil. Cook until golden brown color on both sides about 1-2 minutes on both sides.

Step 5

Cut into 3 pieces and serve with homemade salsa.
