INGREDIENTS

– 2-3 lb chicken thighs Marinade Ingredients – 3 tablespoons soy sauce  – 3 tablespoons lemon juice or lime juice – 5 tablespoons honey – 5 cloves garlic minced or grated – 1 tablespoon fresh ginger finely chopped – 2 tablespoons olive oil or oil of your choice – 1-2 tablespoons  Sriracha sauce I use 1 tablespoon – 1 teaspoon sea salt – 1/4 teaspoon white pepper – 2 tablespoons cilantro For Glaze – 1/2 teaspoon cornstarch

Step 1

Whisk all of the marinade ingredients together in a small bowl.

Step 2

Pour 3/4 cup of the marinade into a sealed ziploc bag or container. Add the chicken thighs and leave them to marinate in the fridge for 3 to 6 hours, or over night.

Step 3

Now, add the marinated chicken thighs onto a hot grill and grill until the chicken is cooked through, flipping once.

Step 4

Also grill any of your favorite veggies like zucchini, bell peppers and broccoli.

Step 5

While the chicken is cooking, make the slurry by combining the reserved marinade with cornstarch. Microwave from 30 seconds to one minute, then brush it over the grilled chicken.

Step 6

Finally, serve the grilled chicken with more marinade if you’d like and chopped cilantro and grilled veggies. Enjoy!

After they’re cooked, store the leftovers in airtight containers in the fridge for up to 5 days.
