Chocolate Peanut Microwave Brittle

INGREDIENTS

– 1 cup sugar – 1/2 cup honey – 1 1/2 cup roasted peanuts or your choice of nuts – 1 tablespoon butter – 2 teaspoons vanilla extract  – 1 teaspoon baking soda  – 1 cup semi-sweet chocolate chips

Step 1

Combine sugar and honey microwave safe bowl. Microwave for about 5 minutes.

Step 2

After add peanuts and microwave for 4 more minutes.

Step 3

Some Microwaves are different and might cook the candy faster. You’ll know the mixture is ready once it reaches 300F degrees ( the hard crack stage).

Step 4

Quickly stir in the butter, vanilla and baking soda until the candy mixture become light and fluffy.

Step 5

After, using a brownie pan add parchment paper and spray oil so brittle doesn’t stick to the paper, pour brittle mixture in. Spread the mixture using spatula.

Step 6

Melt the chocolate in the microwave for 1 minute in 30 second intervals, stirring between.

Step 7

Then spread it over the brittle and sprinkle chopped peanuts over the top.  Let cool in the refrigerator for 30 minutes or until hard. Break it up and serve.

Step 8

For storage. Stack in airtight container with waxed paper in between the layer.
