For Chicken – 2 chicken breasts boneless, skinless and sliced in half – 1 teaspoon sea salt or to taste – 1/2 teaspoon black pepper or to taste – 1 teaspoon Italian seasoning Tuscan Sauce – 2 tablespoons butter – 1 small onion chopped – 3 garlic cloves finely chopped – 1/4 teaspoon red pepper flakes or to taste – 1/4 cup sun dried tomatoes sliced into small pieces – 2 cups baby spinach – 1 1/2 cups heavy whipping cream – 1/2 cup Parmesan cheese grated, plus extra for serving – 2 tablespoons parsley washed and finely chopped Pasta – 8 oz penne pasta cooked according to the package

Using a non stick skillet, preheat 2 tablespoons of butter over medium heat. Once the butter is melted add chicken and cook for 3-5 minutes per side or until chicken it golden brown. Flip the chicken on the other side and cook for another 3-5 minutes or until chicken reaches 165 degrees. Transfer onto a plate and cover with a lid.
After add garlic and crushed red pepper flakes, saute for 1 minutes. Stirring few times. Next pour in heavy whipping cream and bring it to a gentle simmer, stirring with a spoon, over medium heat.
Now, stir in the Parmesan cheese and let simmer for 2 more minutes. Slice chicken into slices and return it to the skillet. Pour the sauce over the chicken and garnish with parsley and extra Parmesan cheese. Enjoy with pasta.
