Easy Chicken Fajita

chicken tenders flour tortillas cheddar cheese spring mix greens salsa mild or fresh pico de gallo Chicken Fajita Marinate avocado oil or any oil of your choice lime juice fajita seasoning chili powder salt

Step 1

In a small mixing bowl combine avocado oil, lime juice, fajita seasoning, chili powder and salt. Give it a very good mix.

Step 2

Now, coat each side of chicken tenders with fajita seasoning marinate.

Step 3

Next, using a nonstick skillet or cast iron preheat avocado oil, add chicken tenders and cook on each side over medium-high heat or until chicken is no longer pink.

Step 4

Transfer to a cutting board. Once cooled, cut into bite size pieces.

Step 5

Wipe the skillet with paper towel (or wash it!), then add 1 tortilla for 30 seconds flip on the other side.

Step 6

Add cheddar cheese, once cheese melts transfer to a plate and add spring mix leaves, chicken pieces and salsa over the top.

Step 7

Roll it up and enjoy!
