Ground Beef Casserole - it is beefy, cheesy, saucy, and so easy to make! It's a great easy and budget-friendly way to feed a crowd.
– 2 cups elbow macaroni uncooked – 2 lb ground beef – 1 large onion chopped – 3 cloves garlic minced or finely chopped – 2 cans diced tomatoes undrained, 14.5 ounces each – 1 can kidney beans rinsed and drained, 16 ounces – 2 tablespoons tomato paste – 1 can green chili drained, 4 ounces – 1 teaspoon chili powder – 1 tablespoon steak spice – sea salt & pepper to taste – 2 cups Monterey Jack cheese grated – 2 tablespoons chives chopped
Add garlic and cook for 1 minute, stirring few times. Drain the liquid. Next add diced tomatoes, kidney beans, tomato paste, chopped green chili, chili powder, steak spice, sea salt & pepper to taste. Stir and bring it to a boil, reduce the heat to simmer and simmer for 10 minutes, stirring few times.
