– 2 1/4 cup gluten-free baking flour
– 1 tablespoons baking powder or 2 teaspoons baking powder and 1 teaspoon baking soda
– 1 1/2 teaspoon pumpkin pie spice
– 1/2 teaspoon salt
– 3 eggs
– 2/3 cup almond milk
– 1/2 cup coconut oil melted
– 1 cup pumpkin puree from the can
– 3 tablespoons maple syrup
Combine wet ingredients: 3 eggs (I like to whisk eggs a little, before adding other ingredients), 2/3 cup almond milk, 1/2 cup melted coconut oil, 1 cup pumpkin puree and 3 tablespoons of maple syrup.
