Ingredients

– 5-8 chicken drumsticks pat dried with paper towel – 2 tablespoon avocado – 1 onion chopped – 3-5 garlic cloves minced – 2 tablespoons flour all-purpose – 1/2 cup dry white wine – 1 1/2 cup chicken broth I use Homemade Golden Chicken Broth – salt & pepper to taste – chopped greens for garnish like parsley

Step 1

Pour the oil into the Instant Pot and set it to sauté mode. In the meantime, pat your drumsticks dry with a paper towel. Getting rid of the excess moisture will help to give them a good sear.

Step 2

Add chicken to the pot and cook on both sides for about 6 minutes or until golden brown. Transfer each one to a plate.

Step 3

While the pot is still on sauté mode, add the onion and cook for 5 minutes. Stir occasionally. Then, add the garlic and flour and stir continuously while it cooks for 1 minute.

Step 4

Slowly whisk in the wine, getting rid of all the lumps as you go. You also want to deglaze the pot, using those brown bottom bits to add a ton of flavor to the sauce. When it starts to boil, pour in the chicken broth, season with salt and pepper, and allow it to boil.

Step 5

Return the drumsticks to the pot, cover with the lid and cook for 20 minutes using the meat/stew setting. Don’t forget to set the valve to the sealing position!

Step 6

Once the cooking time is up, do a quick release of the pressure by moving the valve to venting. Be careful of splatter, and keep your hands and face away from the lid. Once the pressure is gone, open the lid and serve! Garnish with fresh parsley if desired.
