Mushroom Gravy for Mashed Potatoes

My mom's delicious creamy mushroom gravy for mashed potatoes! It is the best thing ever!

– 1 tablespoon avocado oil – 1 tablespoon butter – 1 onion diced – 1 carrot grated – 8 oz mushrooms sliced – 1 tablespoon all-purpose flour – 2 cups heavy whipping cream – salt and pepper to taste – 2 tabllespoons parsley for garnish

Step 1

Using a skillet, heat over medium heat oil and butter. Add onion and sauce for 5 – 7 minutes, or until golden color and onion is soft. Stirring few times.

Step 2

Into the same skillet add grated carrot, sliced mushrooms and season with salt and pepper to taste. Cook for 5 minutes stirring few times, or until mushrooms and carrots are cooked thru.

Step 3

Sprinkle flour, stir and cook for 1 minutes, stirring continuously.

Step 4

Slowly pour in heavy whipping cream, stir and bring it to a gentle boil, season with salt and pepper if needed.

Step 5

Turn off the heat, pour the gravy over Mashed Potatoes. Garnish with parsley and a sprinkle of black pepper. Enjoy!
