Step 1

Using a hand mixer, in a mixing bowl whisk 4 eggs, 1 cup white sugar, 1 cup olive oil and 15 oz. can of pumpkin puree. Whisk until everything is combined.

Using a different bowl, combine 2 cups of flour, 2 teaspoons of baking powder, 1 teaspoon of salt, 1 teaspoon of baking soda, 2 teaspoons of pumpkin pie spice.

Add dry ingredient to wet ingredients, whisk using mixer until everything is combined and there are no lumps in the batter.

Pour the batter into the muffin cups.

Sprinkle streusel over the top and bake at 350F for about 25 – 30 minutes, until toothpick comes out clean when inserted into the muffins.
