Quick & Easy Mushroom Gravy for Mashed Potatoes

Ingredients

– 1 tablespoon oil I use grape seed oil – 1 tablespoon butter – 1 onion diced – 1 carrot grated – 8 oz mushrooms sliced – 1 tablespoon all-purpose flour – 1 pint - 2 cups heavy whipping cream – salt and pepper to taste – parsley for garnish

Step 1

Using a skillet or a sauce pan, heat on medium heat 1 tablespoon of oil and 1 tablespoon of butter. Add onion and sauce for 5 – 7 minutes, or until golden color and onion is soft. Stirring few times.

Step 2

In to the same skillet add 1 grated carrot, 8 oz. of sliced mushrooms and season with salt and pepper to taste. Cook for 5 minutes stirring few times, or until mushrooms and carrots are cooked thru.

Step 3

Sprinkle 1 tablespoon of flour, stir and cook for 1 minutes stirring the whole time.

Step 4

Slowly pour in 1 pint of heavy whipping cream, stir and bring it to a gentle boil, season with salt and pepper if needed.

Step 5

Turn off the heat, pour the gravy into a sauce dish, garnish with fresh parsley. Enjoy with warm Mashed Potatoes.
