Spicy Shrimp Patties

– 1 lb wild-caught shrimp peeled & deveined – 1 tablespoon avocado oil or any oil of your choice – 1/2 cup red bell pepper finely chopped – 1 clove garlic finely chopped – 1/4 cup red onion finely chopped – 1/4 cup cilantro finely chopped – 1/4 cup green onion finely chopped – 1/2 small jalapeno seeded & finely chopped – 1 1/2 cup Panko breadcrumbs divided – 1 egg – 3 tablespoons mayo – 1 1/2 teaspoon hot pepper sauce or to taste – 1 tablespoon lime juice freshly squeezed – 1/2 teaspoon organic sugar – salt & pepper to taste

Step 1

Using food proccesor, add 1 lb shrimp & pulse until tiny pieces, transfer chopped shrimp to a mixing bowl. Set aside.

Step 2

Preheat 1 tablespoon of oil in a skillet, then add 1/2 cup chopped bell pepper and saute for 3 minutes. Next add 1 clove of chopped garlic and saute for 1 minute, stirring few times. Turn off the heat.

Step 3

Combine the rest of the ingredients into the shrimp bowl: red onion, cilantro, green onion, small jalapeno, Panko breadcrumbs, egg, mayo, hot pepper sauce, lime juice, sugar, salt & pepper to taste. Plus saute bell peppers with garlic.

Step 4

Grease the Air Fryer pan with avocado oil and add shrimp patties (try not to crowd them!).Cook for 10 minutes, flipping shrimp patties once on the other side.

Step 5

You can also cook shrimp patties in the skillet with a little bit of oil.

Step 6

Serve shrimp patties with lime wedges & Avocado Corn Salsa. Enjoy!
