Ingredients for Pie Crust
– 1 1/2 cups all-purpose flour
– 3/4 cup butter
– 1/4 cup sugar
For Strawberry Rhubarb Filling
– 2 cups rhubarb sliced
– 2 cups strawberries sliced
– 1 1/4 cup sugar plus 1 tablespoon for sprinkle, reduce sugar if you like it less sweet
– 3 eggs
– 1/2 teaspoon sea salt
– 1/2 cup all-purpose flour
While crust is baking lets make strawberry rhubarb filling. In a mixing bowl combine 3 eggs, 1 1/4 cup of sugar, 1/2 cup of flour and 1/2 teaspoon sea salt.
After crust is done baking, pour rhubarb pie filling over the crust, spread evenly using spatula. Next, sprinkle 2 cups of sliced strawberries over the top. Also, sprinkle 1 tablespoon of sugar over the strawberries.
