Sweet and Sour Chicken with Pineapple and Peppers




Beer Batter – 3/4 cup all purpose flour – 1 teaspoon baking powder – 1/2 teaspoon Kosher salt or to taste – 1 cup beer Sweet and Sour Sauce – 1/4 cup honey – 1/3 cup apple cider vinegar – 3 tablespoons pineapple juice from the can – 3 tablespoons ketchup – 3 teaspoons soy sauce – 1 teaspoon Worcestershire sauce – 1 tablespoon cornstarch dissolved in 4 tablespoons of cold water Sweet and Sour Chicken – 1 lb organic chicken breast or tenders skinless & boneless, cut into 1/2-1 inch pieces – avocado oil for frying – 1/2 cup flour – 2 red bell pepper seeded & sliced – 6-8 green onion stems chopped into 1 inch slices – 8 oz can, chopped pineapple 3 tablespoons of juice reserved for the sauce, the rest is drained

Step 1

To make beer batter, combine flour, baking powder and salt in a mixing bowl. Then pour in 1/2 cup of beer and whisk the batter until smooth. After pour in the rest of 1/2 cup of beer. Whisk until everything is combined and there are no lumps.

Step 2

To make sweet and sour chicken, using a wok or a frying pan, fill it up halfway with avocado oil or any oil of your choice. Preheat the oil over medium/high heat. Working in batches, toss each chicken piece in 1/2 cup flour.

Then coat it in the beer batter, and carefully add chicken to the hot oil.

Deep fry until golden color and chicken is cooked thru about 3 minutes.

After chicken is done cooking transfer it to a plate lined with paper towel.

Using a big skillet or wok, add 1 tablespoon of avocado oil over medium/high heat, add bell pepper and stir fry for 1 minute.

Now, add sauce ingredients: 1/4 cup honey, 1/3 cup apple cider vinegar, 3 tablespoons pineapple juice, 3 tablespoons ketchup, 3 teaspoons soy sauce and 1 teaspoon Worcestershire sauce.

Step 8

Stir until sauce warms up then stir in 1 tablespoon of corn starch dissoled in 4 tablespoons of water. Cook until sauce thickens about 3 minutes stirring few times.

Step 9

After, add green onion and pineapple and stir fry for another 1 minute.

Step 10

Coat chicken in the sauce and turn off the heat. Serve Sweet and Sour Chicken with Pineapple and Peppers with cooked rice or rice noodles. Enjoy!
