Step 1

When kneading a dough I like to use stand mixer: into a stand mixer bowl add 3 cups flour, 1 teaspoon salt and give it a nice stir. Next, add 1 egg, 1/4 cup avocado oil and 3/4 cup of water. Using a hook attachment, knead on low setting until dough forms about 5-10 minutes.

Step 2

After, cover the dough with plastic food wrap and let rest for about 15-20 minutes. Now lets make pelmeni filling.

Step 3

Into a food processor (I got mine from Costco) add 1 small zucchini and 2 cloves of garlic, pulse until almost pureed.

Step 4

Then place pureed zucchini with garlic into a mixing bowl with 1 lb ground turkey, 1/2 lb ground pork.

Step 5

Season with salt and pepper, and give it a good mix with hands (I use gloves when touching raw meat) or a spoon. Dumplings filling is ready to be used.

Step 6

To make pork dumplings, first divide the dough into 4 balls. Take one dough ball and cover the rest with plastic wrap. Using hands roll dough between hands to form a long skinny sausage, then cut it into small pieces.

Step 7

Dust each piece in a little bit of flour, then using a roller pin roll out each piece into a dumpling circles.

Step 8

After place meat filling onto the center of the dough circle, fold dough in half and pinch with finger tips to seal.

Step 9

Then bring 2 ends together and press on top of each other to make a dumpling. Repeat, until all dumplings are made.

Step 10

When half way done, bring a pot of salted water to a boil.

Step 11

Once water starts boiling carefully add dumplings and bring them to a boil, stirring few times. After water starts boiling, cook on medium heat for about 5 minutes, or until pelmeni cooks thru.

Step 12

Using a slotted spoon remove dumplings onto a plate and stir in butter, so dumplings don’t stick to each other. Serve with sour cream and black pepper. Enjoy!
