Ultimate Bacon Corn Zucchini Parmesan

Ingredients

– 4 bacon slices cut into small pieces – 1 medium size zucchini cubed about 2 cups – 1 cup fresh corn – 1 small onion chopped – 1/4 cup Parmesan cheese grated – salt and pepper to taste

Step 1

Using a medium size skillet on a medium heat, add bacon and cook until browned. Drain and transfer the bacon to a plate lined with paper towel, reserve 1 tablespoon of bacon grease.

Step 2

In the same skillet preheat 1 tablespoon of bacon grease and cubed zucchini, onion, and 1 cup of corn kernels. Cook on medium heat for about 10 minutes, or until tender texture.

Step 3

Season with salt and pepper to taste. Sprinkle with cooked bacon and grated Parmesan cheese. Serve warm. Enjoy!
