In a mixing bowl combine 2 cup of flour, 1 teaspoon salt, 1/8 teaspoon ground nutmeg. Stir to combine.
To the same bowl add 1 cup mashed potatoes and 1 egg. Mix then knead with your hands until it turns into a nice ball of dough.
Now grab 1/2 teaspoon of dough and roll it between your palms to form a ball, then using your finger press each gnocchi down. After all of the gnocchi is made, you can start cooking the chicken gnocchi soup.
How to make Chicken Gnocchi Soup:
First melt 1 tablespoon of butter with 1 tablespoon of olive oil in a big soup pot, over medium heat.
Add 1/2 cup of grated carrots, 1/2 cup of chopped onion, 1 stalk of chopped celery and 1 teaspoon of minced garlic sauce for about 3 minutes, stirring few times.
Combine 6 cups of chicken broth with 2 tablespoon of cornstarch, whisk to combine. Pour the broth mixture into the pot and bring it to a boil. Once the broth is boiling add gnocchi, 1/8 teaspoon ground nutmeg, 1/2 teaspoon dried thyme, salt and pepper to taste. After it starts boiling again reduce to medium/low heat and simmer for about 10 minutes, stirring few times.
Pour in 2 cups of half and half and simmer for 15 minutes, stirring few times.
Lastly add 2 cups of chopped turkey or chicken meat and 1 cup of chopped spinach, simmer for 10 more minutes. Serve warm with Parmesan Cheese & dinner rolls. Enjoy!
