Using a medium size skillet on a medium heat, add bacon and cook until browned. Drain and transfer the bacon to a plate lined with paper towel, reserve 1 tablespoon of bacon grease.
In the same skillet preheat 1 tablespoon of bacon grease and cubed zucchini, onion, and 1 cup of corn kernels. Cook on medium heat for about 10 minutes, or until tender texture.
Season with salt and pepper to taste. Sprinkle with cooked bacon and grated Parmesan cheese. Serve warm. Enjoy!
