In a mixing bowl, combine 1 chopped bunch of kale, ½ cup of sliced small red onion, 1 cup pomegranate seeds, and ½ cup toasted pecans.
In different bowl combine ⅓ cup extra virgin olive oil, ¼ cup apple-cider vinegar, 2 tablespoons Dijon mustard, 2 tablespoons raw honey, salt and pepper to taste. Whisk until everything is combined.
Pour over the salad and toss with 2 forks to coat. Garnish with 2 oz. crumbled goat cheese and ½ teaspoon of chia seeds. Enjoy!
