Best Pumpkin Dairy Free Muffins Recipe - this easy pumpkin muffin recipe is incredibly fluffy and tastes amazing with dairy free streusel and scrumptious glaze.
Preheat the oven to 350F and line muffin pan with baking cups, set aside. Using a hand mixer, in a mixing bowl whisk 4 eggs, 1 cup white sugar, 1 cup olive oil and 15 oz. can of pumpkin puree. Whisk until everything is combined.
Using a different bowl, combine 2 cups of flour, 2 teaspoons of baking powder, 1 teaspoon of salt, 1 teaspoon of baking soda, 2 teaspoons of pumpkin pie spice.
Add dry ingredient to wet ingredients, whisk using mixer until everything is combined and there are no lumps in the batter.
Pour the batter into the muffin cups, sprinkle streusel over the top and bake for about 25 - 30 minutes, until toothpick comes out clean when inserted into the muffins. Let pumpkin muffins cool. Drizzle glaze over the top. Enjoy!

To make struesel topping, in a mixing bowl combine 3/4 cup of all-purpose flour, 1/4 cup of sugar, 1/4 cup of brown sugar, 6 tablespoons of olive oil, 1 teaspoon cinnamon. Now mix well using hands or a spoon.
How to Make White Glaze for Muffins
Now, lets make super easy glaze for muffins, in a mixing bowl mix 1 cup of powdered sugar with 1-2 tablespoons of almond milk. Mix until everything is combined.
