First, combine sugar and honey microwave safe bowl. Microwave for about 5 minutes. Through out the 5 minutes in the microwave keep a watchful eye on the on mixture as it can start to puff and you need to stop and stir and continue microwaving. After add peanuts and microwave for 4 more minutes.You’ll know the mixture is ready once it reaches 300 degrees (the hard crack stage).
Quickly stir in the butter, vanilla and baking soda until the candy mixture become light and fluffy.
After, using a brownie pan add parchment paper and spray oil so brittle doesn't stick to the paper, pour brittle mixture in. Spread the mixture using spatula.
Melt the chocolate in the microwave for 1 minute in 30 second intervals, stirring between. Then spread it over the brittle and sprinkle chopped peanuts over the top.
Let cool in the refrigerator for 30 minutes or until hard. Break it up and serve. Enjoy!
