Greek Cucumber Salad
Greek Cucumber Salad made of crunchy cucumber, ripe tomatoes, feta cheese, black olives and easy to make 3-ingredient dressing - you will enjoy the crunchiness of this healthy Greek salad.

Ingredients

ripe plum tomatoes

English cucumber

crumbled feta cheese

cup
Kalamata olives
Juice of ½ lemon
¼
cup
extra virgin olive oil
salt & pepper to taste
parsley or basil to garnish
Instructions
Slice tomatoes into wedges. Peel cucumber leaving few skin strips on. Cut into 4 strips, cut out the seeds, then chop cucumber into small cubes.
Place tomatoes and cucumber into a salad bowl, add feta cheese and olives.
To make salad dressing: Combine olive oil, lemon juice, salt and pepper. Stir and drizzle over the salad.
Garnish with parsley or basil. Grab a fork and enjoy!
Notes
The Greek Cucumber Salad can be made ahead through step 2 and stored for up to 2 hours.
