Preheat the oven to 450F. Line baking sheet with parchment paper. Place on a baking sheet 1 eggplant, 2 red bell peppers, 2 tomatoes, 1 onion and 1 carrot. Take a brush or using your hand oil all of the vegetables with avocado oil, season with salt and pepper to taste, bake on a middle rack for 20 minutes. After, broil on high for about 5-7 minutes.
While vegetables are baking, slice french bread drizzle olive oil and bake on top rack for about 3 minutes or until toasted.
Remove skin from the eggplant, place all ingredients in the blender and blend until smooth (if you want you can instead of blending chop everything with a knife). Season with ⅛ red pepper flakes, salt & pepper to taste.
Spread the eggplant spread over the toasted bread, garnish with roasted beef, feta cheese and cilantro. Enjoy!
