Ingredients for Cupcakes:

  • 1 & ⅓ cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter melted and cooled
  • 1 cup 200g sugar
  • 1 large egg
  • 1 cup buttermilk/kefir
  • 2 tsp organic pure vanilla extract

Ingredients for Vanilla Buttercream Frosting:

  • 1 1/2 cup unsalted butter cold, sliced into cubes
  • 5 cups powdered sugar
  • 2 1/2 tsp vanilla extract
  • 2 tbsp heavy whipping cream
  • 2-4 drops of pink food color + 1-3 drops of yellow food color


  • How to make Vanilla Cupcakes:
  • Preheat oven to 350F. Line a muffin pan with 12 white cupcake paper liners.
  • In a mixing bowl combine 1 & 1/3 cup flour, 2 teaspoons of baking powder and 1/4 teaspoon salt. Mix and set aside. In 2nd mixing bowl whisk 1/2 cup melted butter with sugar. Whisk in 1 egg, 1 cup kefir and 2 teaspoon vanilla extract.
  • Pour wet ingredients into dry ingredients, whisk until combined, don't over mix. Using greased 1/4 measuring cup, divide the batter among the 12 muffin cups. Bake on the middle rack for 20-22 minutes, or until the toothpick comes out clean when inserted in the middle of the cupcake. Let cupcakes cool before frosting them.
  • How to make Vanilla Butter Frosting:
  • Using a stand mixer with paddle attachment, whip 1 1/2 cup of cold butter for about 5 minutes, scraping butter down few times. Whip until butter turns into lighter color.
  • Add 2 cups of powdered sugar, mix until combined, again scraping down the frosting. Pour in 2 1/2 teaspoons of vanilla extract, whip until combined.
  • Add 3 cups of powdered sugar, whip until combined, add 2 tablespoons of whipping cream & pink & yellow food coloring, whip the frosting for about 5 more minutes. Now it is ready to frost those cupcakes.
