How to make Vanilla Cupcakes:
Preheat oven to 350F. Line a muffin pan with 12 white cupcake paper liners.
In a mixing bowl combine 1 & ⅓ cup flour, 2 teaspoons of baking powder and ¼ teaspoon salt. Mix and set aside. In 2nd mixing bowl whisk ½ cup melted butter with sugar. Whisk in 1 egg, 1 cup kefir and 2 teaspoon vanilla extract.
Pour wet ingredients into dry ingredients, whisk until combined, don't over mix. Using greased ¼ measuring cup, divide the batter among the 12 muffin cups. Bake on the middle rack for 20-22 minutes, or until the toothpick comes out clean when inserted in the middle of the cupcake. Let cupcakes cool before frosting them.
How to make Vanilla Butter Frosting:
Using a stand mixer with paddle attachment, whip 1 ½ cup of cold butter for about 5 minutes, scraping butter down few times. Whip until butter turns into lighter color.
Add 2 cups of powdered sugar, mix until combined, again scraping down the frosting. Pour in 2 ½ teaspoons of vanilla extract, whip until combined.
Add 3 cups of powdered sugar, whip until combined, add 2 tablespoons of whipping cream & pink & yellow food coloring, whip the frosting for about 5 more minutes. Now it is ready to frost those cupcakes.
