CHRISTMAS Cookies WHOOPIE PIE Cookie Recipe - YOUR friends & family won't be able to resist these soft & sweet Christmas cookies They are made of 2 soft & fluffy chocolate cookies, filled with cream cheese filling and dipped in candy canes pieces. They are so scrumptious!!!
Preheat the oven to 400F. Line a baking sheet with a parchment paper, set aside.
In a large mixing bowl, using a mixer whisk 1 cup sugar with ½ cup softened butter, ½ cup of buttermilk, 2 teaspoons of vanilla extract, 2 eggs and 2 oz unsweetened chocolate. Whisk until everything is combined.
Using a spatula or a spoon stir in 1 ¾ cups of flour, ½ baking soda and ½ teaspoon salt.
Using a tablespoon, place rounded tablespoon of the dough on the baking sheet, about 2 inches apart.
Bake 8-10 minutes or until baked thru. Immediately remove from cookie sheet to a cooling rack and let it cool for about 30 minutes.
HOW TO MAKE CREAM CHEESE FILLING:
Using a mixer whisk 4 oz softened cream cheese, 6 tablespoons of butter and ½ teaspoons of vanilla extract in a mixing bowl on medium speed until fluffy. Gradually beat in 1 ½ cups of powdered sugar until light and fluffy.
HOW TO MAKE WHOOPIE PIES:
Using a frosting pipe, pipe frosting on one cookie then place another cookie on top. Roll each whoopie cookie in crushed candy cane or a garnish of your choice. Enjoy!
