How to Make Beer Batter
To make beer batter, combine flour, baking powder and salt in a mixing bowl. Then pour in 1/2 cup of beer and whisk the batter until smooth. After pour in the rest of 1/2 cup of beer. Whisk until everything is combined and there are no lumps.
How to Make Sweet and Sour Chicken
To make sweet and sour chicken, using a wok or a frying pan, fill it up halfway with avocado oil or any oil of your choice.
Preheat the oil over medium/high heat. Working in batches, toss each chicken piece in 1/2 cup flour, coat it in the beer batter then carefully add chicken to the hot oil.
Deep fry until golden color and chicken is cooked thru about 3 minutes. After chicken is done cooking transfer it to a plate lined with paper towel.
How to Make Sweet and Sour Sauce
Using a big skillet or wok, add 1 tablespoon of avocado oil over medium/high heat, add bell pepper and stir fry for 1 minute.
Now, add sauce ingredients: 1/4 cup honey, 1/3 cup apple cider vinegar, 3 tablespoons pineapple juice, 3 tablespoons ketchup, 3 teaspoons soy sauce and 1 teaspoon Worcestershire sauce. Stir until sauce warms up then stir in 1 tablespoon of corn starch dissoled in 4 tablespoons of water. Cook until sauce thickens about 3 minutes stirring few times.
After, add green onion and pineapple and stir fry for another 1 minute. Coat chicken in the sauce and turn off the heat. Serve with cooked rice or rice noodles. Enjoy!

The Beer Batter can be prepared ahead of time.
Cut chicken meat into bite size pieces about 1/2 - 1 inch.
Serve Sweet and Sour Chicken immediately after cooking it.
Serve with Rice Noodles or Fluffy Cooked Rice.
