Prepare all ingredients by peeling and finely chopping them. When chopping jalapeño I would highly recommend using cooking gloves. Combine sliced avocado, 1 cup of corn, ¼ cup fresh cilantro, ¼ cup red onion, ½ of small chopped jalapeno, ½ of lime juice, salt & pepper to taste.
Gently, stir avocado salsa mixture using a spoon. Serve with Spicy Shrimp Patties. Enjoy!
