Homemade Pesto

  • 1 cup basil & parsley leaves washed
  • 1/2 cup pecans or walnuts toasted
  • 1/4 cup Parmesan cheese finely grated
  • 2 cloves garlic peeled
  • 1/3 cup avocado oil

Mushroom Pasta

  • 10-12 oz. pasta shells uncooked
  • 1 tablespoon avocado oil or any oil of your choice
  • 1/2 cup tomatoes diced
  • 8 oz. mushrooms sliced
  • 1/4 cup dry white wine
  • 1/2 cup chicken broth


How to make Pesto:

  • To make homemade pesto, combine all pesto ingredients in food processor except oil, salt & pepper.
  • Pulse until everything is coarsely chopped. Then while the food processor is running on low speed, slowly pour in 1/3 cup of oil, more if needed.
  • Turn off food processor, taste pesto and season with salt and pepper to taste. Pesto is ready!

How to make Mushroom Pasta:

  • First, cook pasta according to package instructions.
  • While pasta is cooking, over medium/high heat , heat 1 tablespoon of oil in large skillet. Add mushrooms and diced tomatoes and sauce for about 5-7 minutes, stirring few times.
  • After pour in, 1/4 cup of white wine and 1/2 cup of chicken broth and bring it to a gentle boil. Boil for about 4 minutes, or until sauce gets a little thicker.
  • Finally stir in homemade pesto and cooked pasta.
  • Garnish with extra Parmesan cheese. Serve with 3-ingredient Oven Baked Chicken. Enjoy!
