To make homemade pesto, combine all pesto ingredients in food processor except oil, salt & pepper.
Pulse until everything is coarsely chopped. Then while the food processor is running on low speed, slowly pour in 1/3 cup of oil, more if needed.
Turn off food processor, taste pesto and season with salt and pepper to taste. Pesto is ready!
How to make Mushroom Pasta:
First, cook pasta according to package instructions.
While pasta is cooking, over medium/high heat , heat 1 tablespoon of oil in large skillet. Add mushrooms and diced tomatoes and sauce for about 5-7 minutes, stirring few times.
After pour in, 1/4 cup of white wine and 1/2 cup of chicken broth and bring it to a gentle boil. Boil for about 4 minutes, or until sauce gets a little thicker.
Add a splash of heavy whipping cream to the sauce if you like creamy sauce.
