Ingredients

Instructions

  • Using a blender, combine 1 1/2 cups of almond milk, 3 eggs, 3 teaspoons of maple syrup, 1 1/2 cups almond flour, 1 1/2 cups of old-fashioned rolled oats, 2 teaspoons of baking powder & 1 teaspoon of sea salt.
  • Blend until smooth, about 30 seconds. Then pour it into a bowl and let it rest for about 10 minutes.
  • After 10 minutes, using a spatula fold in 1/2 cup of chocolate chips. Using a nonstick skillet over medium heat, preheat 2 tablespoons of avocado oil.
  • Pour about 2 tablespoons of batter for each pancake into the heated skillet and cook on both sides until golden brown color about 2-3 minutes on each side. When you see bubbles forming & popping on the top that is when you can flip the pancakes on the other side.
  • Serve pancakes with chocolate syrup or maple syrup. Enjoy!

Notes

  • These pancakes freeze amazing in airtight container or freezer friendly zip bag.
  • Use honey or sugar if you don't have maple syrup on hands.
  • Double this recipe and freeze for busy mornings, then use a toaster to heat them thru.
