Preheat the oven to 425F. Line baking sheet with parchment paper.
Peel and cut the sweet potato into thin wedges. Place wedges into a mixing bowl. Season with ½ teaspoon of paprika, ¼ teaspoon of garlic powder, ½ teaspoon of chili powder, salt & pepper to taste.
Drizzle 1 ½ tablespoons of olive oil over the top and mix with hands, coating every wedge with seasoning and oil.
Place wedges on a baking sheet and bake for 15 minutes, then flip on the other side and bake for 10 more minutes, or until wedges are cooked thru and has golden color.
How to Make Tzatziki Sauce
Using a spoon remove seeds from the cucumber, then thinly slice it and chop it into small pieces. Finely chop 1 garlic clove and parsley.
Add yogurt to a small mixing, into the same bowl add chopped cucumber, garlic, parsley and season with salt and pepper to taste. Squeeze lemon juice over the top and give it a good mix.
Serve roasted sweet potato wedges with tzatziki sauce. Garnish with finely chopped parsley. Enjoy!

Sweet Potatoes can be hard, making it pretty hard to cut so my little secret is to pop them in the microwave for about a minute and a half to heat and soften the potato, then slice into thin wedges. When you pop them in the microwave it helps soften the potatoes and it also helps cut down the baking time and we all love a quick dish!
