Lamb Chops in Oven with Red Wine Sauce

Ingredients

– 1 lamb rack with 8 bones – 3/4 cup bread crumbs – 1/4 cup grape-seed oil plus more for frying – 2 teaspoon fresh thyme chopped – 2 teaspoon fresh rosemary chopped – 1 garlic clove minced – 2 tablespoons Dijon mustard – salt and pepper to taste Ingredients YOU will need to make Wine Sauce 100% OPTIONAL: – 1/2 cup dry red wine – 1/2 tablespoon raw honey – 1 cinnamon stick – 1 Anise star – 1/2 cup bread

Step 1

Using a sauce pan bring to a boil ½ cup dry red wine, ½ tablespoon raw honey, 1 cinnamon stickand 1 Anise star. Let it cool. Strain.

Step 2

Meanwhile, take ½ cup of bread and fry it in the skillet until crispy texture. Blend wine and bread together, until smooth texture. Your red wine sauce is ready!

Step 3

Preheat the oven to 400F. Season lamb chops with salt and pepper. Add a splash of oil into the cast iron skillet and bring it to a medium/high heat. Add lamb chops and brown them for about 3 minutes on each side. Bake for 8-10 minutes.

Step 4

While lamb chops are baking, in a mixing bowl combine ¾ cup bread crumbs, ¼ cup oil, 2 teaspoon fresh thyme, 2 teaspoon fresh rosemary, and 1 garlic clove, mix until combined.

Step 5

Spread 2 tablespoons of Dijon mustard over the lamb chops and add bread crumb mixture on top, broil on high until golden color, about 3-5 minutes. Enjoy!
