INGREDIENTS

4 tablespoons butter ▢2 lb chicken thighs about 6-8 pieces, depends on the size - cut into 1 inch pieces ▢½ teaspoon coriander ▢2 teaspoon Italian seasoning or use 21 Salute Seasoning from Trader Joe's ▢salt & pepper to taste ▢4 cloves garlic finely chopped ▢4 cups chicken broth I like to use homemade chicken broth ▢2 cups heavy whipping cream ▢16 oz pasta I like to use penne pasta, uncooked ▢2 cups Parmesan cheese freshly grated ▢2 tablespoon parsley finely chopped

Step 1

Season the pieces of chicken on all sides with Italian seasoning, coriander, salt, and pepper.

Step 2

In a large pot brown the chicken on all sides. Add the garlic and cook for 1 minute until fragrant.

Step 3

Pour in the chicken broth and heavy cream. Use a wooden spoon to deglaze the bottom of the pot. The brown bits that are released will add tons of flavor.

Step 4

Pour in the uncooked pasta and stir to make sure everything is combined. Cover with a lid and simmer for 15-20 minutes.

Step 5

Once the pasta is tender and the chicken is cooked through, stir in the Parmesan cheese.

Step 6

Sprinkle with fresh parsley and serve!
